Salad Days
I’m a big fan of the farmer’s market. It’s close to our house, it’s full of bright colors, delicious smells and it’s an incredibly satisfying feeling to bike home with canvas bags filled with the farmer’s riches from berrries to leafy greens. Plus there’s always a celebrity sighting or two, we get to visit with the dogs up for adoption each Sunday, hoping to see fewer dogs each weekend and we lug home one of the best tasting rotisserie chickens from the chef who roasts them at the market. He and his assistant sweat from the heat of the the big -ol cooker and the heat of the outdoors while we wait in line for the fragrant spiced perfectly cooked, moist and tender chicken.
Many Sunday dinners at our house consist of the newly bought market foods and this salad is one of our favorite. I call it my hot and cold salad.
The ingredients:
Romaine
Beets
Onions
Cucumber
Red bliss small potatoes
Rotisserie chicken
Asparagus or haricot vert
Wash, dry and tear up roimaine pieces
Slice fresh beets
Peel cucumber and slice
Add into bowl
In a pan on the stove top, saute onions with a bit of olive oil, add cut up asparagus or haricot vert into the mix and add dashes of salt and pepper. Once the onion is slightly soft and the greens are bright and nearly cooked add in pieces of chicken to warm up in the mix.
In a baking dish or on a cookie sheet lined with aluminum foil, mix quartered cut potatoes with olive oil, salt, pepper and a heavy sprinkling of paprika. Put in the broiler and constantly and shift the potatoes so they don’t burn.
When the potatoes and pan with mixed ingredients are complete add the ingredients to the bowls filled with the sliced beets, cucumbers and romaine.
You have a delicious mix of cold and hot ingredients for a hearty, but fairly healthy dinner. Just add your dressing of choice.
With dressing-make your own or we like honey mustard dressing.
